Suggested Use

Pumpkin Cookies

Dry Ingredients:

2 cups Bob's Red Mill Millet Flour

½ cup Soy Flour, Buckwheat Flour, or Amaranth Flour

3 tsp. Baking Powder

2 tsp. Cinnamon

½ tsp. Sea Salt

½ tsp. Nutmeg

1/4 tsp. Ginger

1-2 cups Raisins (optional)

1 cup chopped Nuts (optional)

Liquid Ingredients:

1 ½ Cups cooked mashed pumpkin

1 ¼ Cups Honey

2 Eggs, beaten

½ Cup Canola Oil

1 tbsp. Molasses (optional)

1-2 tsp Vanilla (optional)

Preheat oven to 400°F-425°F. Stir dry ingredients into liquid ingredients. This makes a thick pourable batter. Bake medium-sized cookies for 12-14 minutes.

Millet flour is so good for you and full of protein. I use it to make waffles, cakes and other baked goods and it works very well. Store this in the frigerator/freezer for better life. It is a very fine grind. I like being able to get it here at a great price rather than going to Whole Foods and spending too much there. Highly recommend.
