Carob Powder comes from finely ground, dried and toasted pods of the carob tree. It is a healthy alternative to cocoa that's low in calories and contains no fat. Carob is an excellent substitute for chocolate or cocoa powder in cakes, cookies, and candy. To substitute Carob Powder for cocoa, replace one part cocoa with one and one-half to two parts carob by weight. To substitute for chocolate, use 3 Tbsp. Carob Powder and 1 Tbsp water in place of each square of chocolate.

Carob Fruit & Nut Brownies
2/3 cup Bob's Red Mill Whole Wheat Flour
1/3 cup Bob's red Unbleached White Pastry Flour
1 tsp Baking Powder
2 Eggs or 4 Egg Whites, stiffly beaten
1/2 cup Butter
2/3 cup Honey
1 tsp Vanilla
1/2 cup Bob's Red Mill Carob Powder
1 Tbsp Butter, melted
3 Tbsp Skim Milk
1 cup Walnuts, Pecans, or Almonds, chopped
1/2 cup Carob Chips
1/2 cup Dried Fruit, chopped
Preheat oven to 350º. In a large bowl combine whole wheat flour, pastry flour and baking powder. In a separate bowl cream together butter and honey until smooth, add egg and vanilla and mix. In a third bowl blend the carob powder, melted butter and milk together, then pour into honey mixture, blending well. Add the flour mixture slowly stirring together until smooth. Add the nuts, carob chips and fruit. Pour the batter into a lightly oiled 9" x 9" baking pan. Bake for 25 minutes. Cool before cutting into bars. Makes 24 bars.

iHerb doesn't have any raw carob powder, so I get this one instead. It is really excellent. I am sensitive to caffeine, so this is a great alternative for homemade 'chocolate' I make a lovely carob bar using this, and use it in smoothies and other recipes. Be aware carob is NOT a chocolate replacement - it is a different taste, a bit sweeter and just different. If you expect it to be like chocolate it will not be. Homemade carob bar - almond butter, coconut oil, coconut butter, carob powder, coconut flakes, chia seeds, hemp seeds, a bit of pink himalayan salt and anything else you want to add - yummmmm

Like some said, it tastes bit chalky, but this is very creamy, this is the first time I buy carob powder, will make some carob chips to replace chocolate chips.

It tastes like a burnt coco powder which seriously has only 20% taste of chocolate and the roasted smell is seriously very strong. I tried making popsicles with it and the whole batch I had to through away because the smell was even worse when its mixed with banana or milk. I bought it only as an alternate to coco powder as I was sensitive to caffeine. And yes It didn't give me any rashes.
